The default tax rate is set by updating the Preferences in Company menu.However you may change the tax rate during invoice creation or recording cash sales transaction by selecting Yes in the Is Taxable field and entering the tax rate in the nearby text box.

Kindly note that, this wouldn’t change the default tax rate but only affects the tax rate for those individual invoice/sales.The tax amount is calculated and automatically displayed in the Tax field.
